Fagioli di Controne (beans)
Organic Fagioli di Controne White bean from Cilento grown organically in the Alento Valley; a small legume with rounded white seeds without spots or eyes. It dates back to Roman times and is particularly prized for being easy to digest and for its thin, barely noticeable skin.
Net weight: 500 g
Description
The seeds, selected and saved by us, are sown in July in rows in fields fertilised exclusively with organic matter. The pods are harvested by hand between October and November, when they have dried as fully as possible on the plant. They are then spread on a cotton cloth for about 10 days.
The beans are then mechanically shelled and placed on the ground for a few more days to dry completely.
The Controne bean is versatile: it can be enjoyed in salads or with escarole, in pasta e fagioli, or in a sauce for lagane (homemade fresh pasta).
