Net weight: 500 g
Description
Organic Fagioli scritti from Cilento
The variety: The Fagiolo scritto del Cilento is a small legume with rounded, red-speckled seeds. It dates back to the Spanish colonisation and is particularly prized for being easy to digest and for its thin, barely perceptible skin.
The growing area: We grow the bean on our farm, in the Municipality of Casal Velino, in the Cilento, Vallo di Diano and Alburni National Park.
Cultivation: The seeds, which we select and save ourselves, are sown in July, in rows, in fields fertilised exclusively with organic matter.
Harvesting and storage: The pods are harvested by hand between October and November, when they have dried as much as possible on the plant. They are then spread out on a cotton cloth for about 10 days. The beans are then mechanically shelled and spread on the ground for a few more days to dry completely.
Tips for use: The Fagiolo scritto can be enjoyed in salads or with escarole, in pasta e fagioli, or served with làgane (homemade fresh pasta).
