The Flavours of Cilento

It is no coincidence that the Mediterranean diet has its roots in the food traditions of Cilento farmers, who knew how to combine good taste and wholesome food with a healthy lifestyle.

Our products come from the organic farming we have practised for several years, which gives them their distinctive flavours.

Besides our own excellent wine, our cellar offers a wide selection of the best wines produced in Campania and the Cilento National Park. There is also a small farm shop where you can buy our food products, such as excellent goat’s cheese with Slow Food Presidium status, made entirely on the farm in our own dairy.

Typical farm products

We take pride in our wide range of products, all made entirely by hand, as tradition dictates, by our family. We have practised this craft for years, bringing the same passion and enthusiasm to it every day: sweet and savoury preserves, cured meats, goat’s cheeses, extra virgin olive oil, wine, liqueurs and much more.

Fresh and artisanally processed

MEAT

The I Moresani farm produces only high-quality meat. Our animals receive a healthy, natural diet based solely on plant products grown using organic farming methods; we do not use soya, but only natural grains, maize, barley, broad beans, protein peas and high-quality hay. Our Podolica cows remain at pasture all year round in the hills within the municipalities of Casal Velino and Pollica. The calves, also Podolica, graze during the weaning period and are then kept in outdoor paddocks. The meat from our organically reared animals is therefore excellent and rich in nutrients and Omega 3.

Processed on our farm

SALUMI

The meat for our cured meats comes from pigs reared organically on the farm, following a natural diet without compound feed or soya, but consisting solely of barley, maize, broad beans and protein peas, much of it grown on land within the Cilento, Vallo di Diano and Alburni National Park.

The genetic selection of the pigs (Large White, Landrace and Duroc breeds), bred and reared entirely on the farm, together with processing carried out wholly on site and traditional curing, gives the meat, and therefore the cured meats, their high quality.

Culatello, salsiccia, traditional Cilento soppressata, capocollo, cured pork fillet and pancetta all have a well-balanced fat content and a spicy aroma.

Classic natural flavourings are used in the curing process: peppercorns, chilli, garlic and sea salt.

Fresh and matured

CHEESES

For years, our farm has been producing both fresh and matured goat’s cheeses. Our animals are reared organically, so the goats have a healthy, natural diet without GMOs or pesticides and are allowed to graze freely every day.

Our products include cacioricotta di capra del Cilento, a cheese with Slow Food Presidium status produced in the municipalities of the Cilento, Vallo di Diano and Alburni National Park. We make it from the hand-milked milk of our grazing goats. It generally matures on racks, for 2 or 3 days for fresh cheese and 3-4 months for matured cheese.

Our farm also produces goat’s cheese matured in a cave in hay from the May harvest. This hay gives the cheese herbaceous flavours and aromas, naturally retains moisture and leaves a delicate yet piquant flavour.

From olives grown in our region

ORGANIC EXTRA VIRGIN OLIVE OIL

Our oil was included in the extra virgin olive oil guide from 2007 to 2013 published by Slow Food, also earning the Gold Medal at the BIOL 2014 international competition. The I Moresani organic extra virgin oil appears clear, light green in colour with yellow shades. On the nose it has a medium-intensity fruitiness, attributable to the green notes of the olive fruit and artichoke leaf. In the mouth it recalls the olfactory perceptions, accompanied by a sweet taste, and light bitter-pungent notes. To the touch it is not very greasy. Harmonious.

Slow Food Presidium

OLIVA AMMACCATA DEL CILENTO

One of our outstanding products is Oliva Salella ammaccata del Cilento, with Slow Food Presidium status: we select the fleshiest olives on the tree before they begin to ripen, crush them one by one with a stone, patiently remove the stones and put them through a lengthy process of washing and soaking in brine. Once ready, our olives are dressed with Salella extra virgin olive oil, mint, etc.

Cilento Flavours

PRESERVES AND TOMATO PASSATA

The vegetables for our preserves in oil come directly from our vegetable garden, are rich in flavour and are grown organically, ensuring high-quality products.

Aubergines, peppers, artichokes, courgettes, pumpkin and chillies are expertly prepared using traditional recipes and preserved in jars of organic extra virgin olive oil.

Agriturismo I Moresani also makes its own tomato preserves.

Production is limited to August and the first days of September, when the tomatoes are perfectly ripe.

Only with natural products

JAMS AND MARMALADES

Our jams and marmalades are all produced from citrus fruits and fruit from our orchards, processed according to seasonality. The biodiversity of the plants, the organic farming method, and the Mediterranean climate contribute to enriching the product with unique flavours and aromas. It is always possible to find the jams and marmalades in our small shop, or order them based on the availability of flavours and products.

Produced and ground by us

ANCIENT GRAIN FLOURS

Ancient grains are grains that have not been altered by humans: they have not been genetically modified over the years, but have retained their original characteristics. They are highly nutritious grains with a low gluten content, ideal for those who want to rediscover the taste of a healthy, natural diet. Since July 2015, our farm has also been carefully sowing two ancient wheat varieties using organic methods: Senatore Cappelli durum wheat and Gentil Rosso soft wheat. Their flours are available in our farm shop.

Prepared by hand

BISCUITS

To rediscover traditional humble ingredients, we have chosen carob for some of our traditional biscuits. Carob is gluten-free and therefore suitable for people with coeliac disease; it has antioxidant, cholesterol-lowering and satiating properties.

We also bake biscuits with top-quality almonds, flavoured with lemons from our organic gardens. We use the same organic lemons to make delicious biscuits with a firm yet crumbly texture and a golden dough.

Cultivated in our fields

LEGUMES

We grow high-quality Controne-type beans and dried chickpeas using strictly organic farming methods. Our pulses are grown on land within the Cilento, Vallo di Diano and Alburni National Park. You can always find dried pulses in our small shop or order them subject to availability.
